Loaded Egg White Omelette

Well, I have had a bunch of my followers picking on me for not updating sooner so I'm throwing a recent recipe that has been a staple for me when I have been cutting back. For me, it is hard to beat a good omelette - but what makes for a good omelette? Simple: lots of flavor, lots of protein, and minimal calories.

This is my recipe for a full of flavor Loaded Egg White Omelette. You can throw just about anything in an omelette like this but I tend to start with a base of Onions, Mushrooms, Bacon, and a few thin slices of Swiss. You can very easily throw in porkroll, sausage, or a host of other ingredients. I will simply breakdown the base and let you jump in from there.

As always, here is the breakdown:

Prep Time: 5 minutes
Cook Time: 10 minutes

Ingredients:

3-5 Mushrooms (any size)
1/4 of a large Spanish Onion
3-5 slices of pre-cooked Bacon (I tend to go for the lean bacon)
about 12-16 oz of Egg Whites
3 slices of Swiss cheese
Cooking spray to grease pan
Salt/Pepper to taste

1. Start by dicing all of the onion and mushrooms. Also, break up the bacon into smaller pieces. After greasing the pan, throw all of these ingredients into your pan. Season with Salt and Pepper.

2. Once everything begins to brown, pour the egg white right on top. I prefer to cook the ingredients into the egg as opposed to fold the ingredients within the omelette but it is all preference.

3. Once the egg begins to solidify, lay the swiss cheese on top and cover for about 1 minute or until melted.

4. Transfer to a plate and serve.

Obviously there is nothing "special" about this recipe but it is definitely a great starting point to many other recipes so I hope you enjoy trying new combinations and letting me know how it turns out!
