Chicken Cordon Bleu

T.G.I.F. Well, what can I say. It has been a long and stressful week so I figured adding a new recipe would be a nice way to start the weekend.

Tonight, I made Chicken Cordon Bleu! I have to give a shout out to Jess on this one as she gave me the idea when I was deciding on the next recipe to blog. Such a fun recipe to try and you can try different types of cheese which allow you to put your own twist on it.


A recipe that only requires a few key ingredients and is full of flavor. Let me break down the recipe which made 5 pieces. As always, feel free to scale based on the amount of servings that you are trying to make.

Prep Time: 5 Minutes
Cook Time: 35 Minutes

1 Package of Thin Sliced Chicken (5 pieces)
1 cup Season Breadcrumbs
5 Slices of Swiss Cheese
5 Slices of Cooked Ham
1 Egg
Cooking Spray

10-15 Toothpicks are strongly recommended.

1. First, make sure to rinse off your chicken to ensure that the meat is as clean as possible. Then, lay out each piece of chicken flat across a large plate.

2. Next, take the portion of ham that you desire to add and lay out on the chicken as centered as possible but slightly favoring one side so that it can be rolled later.

3. After the ham has been layed out, place the slice of cheese on top of the ham (feel free to swap out swiss for your favorite cheese if you prefer). Again, try to make sure the cheese is as centered as possible. At this point, feel free to preheat your oven to 350F.

4. This step requires some patience as it isn't the easiest but you will now start to roll the chicken. Roll the chicken from the favored side over to the other end as tight as you can.. Once rolled, secure the roll with a few toothpicks so that the roll is as sealed as possible (this will help to keep the cheese from leaking out during the cooking process.

5. Now, take a small portion of your breadcrumb and cover the bottom of a plate. Transfer a roll over to the breadcrumb plate ensuring that the bottom is covered. The next step is optional but I found it helpful - take 1 egg and beat it in a bowl. Brush on a layer of the egg on the top side of the chicken that is on the breadcrumb plate (this helps the crumb to stick to the chicken). Now fully cover the rest of the chicken with breadcrumb covering all sides.

6. You can now place the rolls on a greased baking sheet (you only need a small amount of cooking spray) slightly spaced out.

7. Bake for about 35 minutes depending on how hot your oven cooks but check frequently towards the end. I also turned my oven to broil for the last 2-3 minutes (by this point, the chicken is cooked through) to brown the breadcrumb a bit - this isn't necessary but I think it helped.

8. Serve immediately.
